  • Method

    Add everything except the tonic over cubed ice, top with chilled tonic, then stir once gently.

  • Ice

    Plenty of cubed ice.

  • Glass

    Highball glass.

  • Garnish

    Grapefruit peel.

Temperature and dilution

Serve very cold, with the tonic still lively and the bitter centre clear underneath.

Why add the tonic last?

Tonic brings bitterness and sweetness of its own. Add it cold and stir once, gently. It should lengthen the drink while leaving the bitter centre clear.
