The story
This one leaves the gin alone and swaps the bitter. Cynar carries its own history in the bottle, an artichoke amaro, dark and herbal with a vegetal edge, a world away from Campari's bright orange. Go all in and you're a long way from the Classic. Split the bitter between Campari and Cynar and you keep one foot in familiar ground while the amaro adds shade underneath. Either way, Campari's brightness doesn't survive the trade.
