Lillet Blanc
Bottle · Blanc / aromatised wine
What it does
Lillet Blanc is the soft pale-wine side of the Suze White Negroni. It rounds off the gentian without weighing the drink down, which is why it anchors the Wayne Collins version and the long white serve with tonic. Let the tonic run too high and Lillet can vanish into a vague pale sweetness.
In the family
Blanc/bianco aromatised wine
The pale wine side. It holds up the white and bianco drinks with a lighter sweetness, a herbal lift, or a bittered-wine backbone. Lillet, Cocchi Americano, and Dolin Blanc share this ground without behaving the same.
