Suze is the gentian bite in a White Negroni. It looks pale and drinks the opposite: dry, earthy, and sharper than the colour lets on. It needs a pale wine like Lillet or Cocchi Americano for balance, or it takes over fast. Whatever it looks like, it's a world away from Campari.
