What it does
Aperol sits in the red-bitter job but pulls everything softer: more orange, less bite, and a sweeter, easier drink than Campari makes. It wants a firm gin underneath to keep from going slack. This is a deliberate softening, and it changes the drink rather than standing in for Campari.
