What it does

Mezcal turns the base from botanical to smoky and agave-led. Inside the red frame of Campari and rosso it brings earth, smoke, and a much drier feel than the Classic has. Cocchi rounds off the join; Punt e Mes sharpens it and makes it severe. A really smoky bottle will push through almost anything you put around it.

Agave takes the base away from gin. Mezcal brings smoke and earth; reposado tequila brings agave weight without the smoke. Either way, the drink needs enough bitter and vermouth structure around it.
