What it does

Select is a softer red bitter, more at home in the sparkling and soda drinks than in a short, serious Negroni. Its gentler bitterness gives those a rounder, more aperitivo feel, with Cocchi underneath for body. Push the soda or the bubbles too far and it slides toward spritz.

The bitter line of the drink. In a Classic it carries the colour, the grip, and the bitter-orange pressure. Move it and the whole centre shifts: softer with Aperol or Select, darker with Cynar.

What it opens up

Americano
Campari and vermouth, no gin, lengthened with soda. Lower strength, easy before food.
Negroni Sbagliato
Prosecco instead of gin. Bubbles, softer, easier going.
