What it does

Select gives the red bitter a softer edge. It joins Cocchi in the soda and sparkling drinks here, for a rounder aperitivo. The soda or wine is part of the balance, so the amount matters as much as the bottle.

The bitter line of the drink. In a Classic it carries the colour, the grip, and the bitter-orange pressure. Move it and the whole centre shifts: softer with Aperol or Select, darker with Cynar.

Americano
Campari and vermouth, no gin, lengthened with soda. Lower strength, easy before food.
Negroni Sbagliato
Prosecco instead of gin. Lower in strength, with the bubbles carrying the bitter.
