What it does
Prosecco does the lifting in a Sbagliato. In place of the gin it drops the strength, adds the bubbles, and softens the bitter edge. The red-bitter centre still has to read through it, so how sweet the wine is really matters. Too sweet, or poured too long, and the drink slides into spritz.
