Prosecco

Ingredient type · Sparkling wine

What it does

Prosecco does the lifting in a Sbagliato. In place of the gin it drops the strength, adds the bubbles, and softens the bitter edge. The red-bitter centre still has to read through it, so how sweet the wine is really matters. Too sweet, or poured too long, and the drink slides into spritz.

In the family

Prosecco/sparkling wine

Lift in place of the spirit. Sparkling wine stands in for the gin in a Sbagliato, adding bubbles, dropping the strength, and softening the bitter edge. The drier it is, the clearer the red centre stays.
