Lemon garnish
What it changes
Lemon sharpens the finish. It suits the dry and pale drinks, where orange would sit too warm or too sweet on the nose. On a Cardinale, a White Negroni, or a Rosita it keeps things clean and angular. On a red Classic, orange is the better match.
What it opens up
- AmericanoCampari and vermouth, no gin, lengthened with soda. Lower strength, easy before food.
- White NegroniThe pale family. Gin, a pale bitter and aromatised wine, with room for sweetness as well as bite.
- Cynar NegroniCynar takes all or part of Campari’s place. Another herbal bitterness, with gin and sweet vermouth.
- CardinaleGin and Campari with dry vermouth. The wine brings its own herbal character.
- RositaTequila's Negroni cousin, but with more moving parts: split vermouth and bitters.
