Cocchi Vermouth di Torino
Bottle · Sweet vermouth
What it does
Cocchi is the rosso that rounds a Negroni off without tipping it into heavy sweetness. It gives Campari something solid to sit on and still leaves room for whatever the base is, gin or rum or mezcal, to show through. It holds up across short and long drinks, though a really loud base spirit can still walk over it.
In the family
Sweet vermouth/rosso
The cushion and the weight. Rosso rounds off the bitter and the base, and it's what decides whether a drink lands clean, plush, light, or firm. Keep it fresh, because a tired one shows immediately.
