What it does
Campari is the red bitter every Negroni is measured against. It brings the orange bite and the grip that keep sweet vermouth from going soft, and it's where the red comes from. Reach for a gentler red bitter and the drink gets easier, but it drifts off the benchmark. This is the one the others answer to.

The bitter line of the drink. In a Classic it carries the colour, the grip, and the bitter-orange pressure. Move it and the whole centre shifts: softer with Aperol or Select, darker with Cynar.
